A yummy prawn curry which is super easy to prepare and is an absolute delight for the prawn lovers!

PRAWNS LIPTE

Ingredients

12-15 large prawns, peeled and deveined
1 cup dry coconut slices
1 tbsp chopped garlic
2 tsps chopped ginger
5 tbsps chopped fresh coriander
2 green chillies, stemmed
3 tbsps coconut oil
2 medium onions, sliced
2 medium tomatoes, chopped
2 green chillies, chopped
Salt to taste
2 tsps red chilli powder
½ tsp turmeric powder
3 kokum petals
Coriander sprig for garnish

Method

1. Dry roast dry coconut slices till golden brown. Allow to cool and transfer in a blender jar.
2. Add garlic, ginger, 3 tbsps coriander, green chillies and ½ cup water and grind to a fine paste.
3. Heat coconut oil in earthen pot. Add onions and sauté till golden brown.
4. Add tomatoes, green chillies and salt and sauté till tomatoes are pulpy.
5. Add the prepared paste, ½ cup water and mix well. Cover and cook for 4-5 minutes or till oil separates.
6. Add red chilli powder, turmeric powder and mix well. Cover and cook for 2-3 minutes.
7. Add kokum, prawns and mix well. Cover and cook for 5-6 minutes on medium heat.
8. Add remaining coriander and mix well.
9. Garnish with coiander sprig and serve hot with chapati.
