A quick mix of vegetables with long grain beautiful rice, all cooked in a pressure cooker.PRESSURE COOKER VEGETABLE PULAOIngredients 1 small carrot, cut into ½ inch diamonds4-5 French beans, diagonally cut into ½ inch pieces8-10 small cauliflower florets¼ cup green peas1½ cups Daawat Pulav Basmati Rice2 tbsps ghee1 tsp caraway seeds (shahi jeera)6-8 black peppercorns3-4 green cardamoms1 inch cinnamon stick1 bay leaf 1 large onion, sliced1 tbsp ginger-garlic paste2 small tomatoes, choppedSalt to taste8-10 soaked cashew nuts½ tsp red chilli powder¼ tsp turmeric powderChopped fresh coriander leaves for garnishRaita to serveMethod 1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times, add fresh water, soak for 20 minutes and drain. 2. Heat ghee in a pressure cooker, add caraway seeds, black peppercorns, green cardamoms, cinnamon stick and bay leaf and sauté till fragrant. Add onions, mix and sauté till light golden brown. 3. Add ginger-garlic paste, mix and cook for 1-2 minutes or till the raw smell goes away.4. Add tomatoes and salt and mix well. Cook till soft and pulpy. 5. Add carrot, French beans, cauliflower florets, cashew nuts, red chilli powder and turmeric powder and mix well.6. Add soaked rice, mix and add 2 cups hot water, green peas and adjust salt. Mix well, cover and cook under pressure till 2 whistles are released. 7. Open the cooker once the pressure has reduced completely, transfer the cooked rice into a serving plate and garnish with coriander leaves and serve hot with raita.
