At times when you're too lazy to work in the kitchen, the best thing to do is to make this quick chicken pulao. Jhatpat, swadisht aur aasan bhi!PRESSURE COOKER CHICKEN PULAOIngredients 750 grams chicken on the bone1½ cups Daawat Pulav Basmati Rice2 tbsps ghee1 tsp caraway seeds (shahi jeera)6-8 black peppercorns3-4 green cardamoms1 inch cinnamon stick1 bay leaf 1 large onion, sliced1 tbsp ginger-garlic paste2 small tomatoes, slicedSalt to tasteChopped fresh coriander leaves for garnishRaita to serveMethod 1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times, add fresh water, soak for 20 minutes and drain. 2. Heat ghee in a pressure cooker, add caraway seeds, black peppercorns, green cardamoms, cinnamon stick and bay leaf and sauté till fragrant. Add onions, mix and sauté till light golden brown. 3. Add ginger-garlic paste, mix and cook for 1-2 minutes or till the raw smell goes away.4. Add tomatoes and salt and mix well. Cook till soft and pulpy. 5. Add carrot, French beans, cauliflower florets, cashew nuts, red chilli powder and turmeric powder and mix well.6. Add soaked rice, mix and add 2 cups hot water, green peas and adjust salt. Mix well, cover and cook under pressure till 2 whistles are released. 7. Open the cooker once the pressure has reduced completely, transfer the cooked rice into a serving plate and garnish with coriander leaves and serve hot with raita.
