#30Pea & leek soup is the perfect soup to make during the spring season. Served cold or at room temperature, pea and leek soup will taste so fresh, you'll want to slap it.Here's how we made ours:1 1/2 quarts of vegetable stock (https://www.youtube.com/watch?v=Iiaz8p8cO5Q)1/3 cup of rice (we used this as a thickening agent. you can also use potato) go ahead and cook this right in your stock.2 big leeks. rinse well and chop. then sweat them down in a pan with olive oil.2 cloves of crushed garlic1/4 cup of fresh flat leaf parsley4 cups of frozen or fresh peas. (we used frozen. "there's nothing wrong with frozen peas!")small bunch of fresh basiladd all the ingredients to your hot stock with rice and blend with a hand blender, blender or food processor.finish it with a generous squeeze of lemon juiceS&P to tastedollop of creme fraiche. Fresh herbs as garnish and/or some micro greens and pea shoots.BOOM!There you have it!
