As the name suggests, here's a protein-packed pulao recipe which is absolutely lip-smacking and is all set to fill you up for your next lunch or dinner!

Ingredients

1 tbsp white sesame seeds
4-5 button mushrooms, quartered
50 grams soya chunks, soaked and drained
150 grams cottage cheese
1½ cups Daawat Pulav Basmati Rice
1 tbsp ghee
2 green cardamoms
2-3 cloves
3-4 black peppercorns
1 bay leaf
1 inch cinnamon stick
1 tsp cumin seeds
2 medium onions, sliced
Salt to taste
1 tbsp ginger-garlic paste
2 medium tomatoes, sliced
2 tbsps chopped fresh coriander leaves
1 tsp red chilli powder
¼ tsp turmeric powder
1½ tbsps paneer masala
Fresh coriander sprigs for garnish
Raita to serve

Method

1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times. Add fresh water, soak for 20-30 minutes and drain.
2. Heat ghee in a non-stick deep pan, add green cardamoms, cloves, black peppercorns, bay leaf, cinnamon stick and cumin seeds and sauté till fragrant.
3. Add onions and sauté till they turn golden brown. Add white sesame seeds, salt and ginger-garlic paste and sauté for 1 minute.
4. Add tomatoes, mix and sauté for 2-3 minutes. Add coriander leaves, mix and cook for 1 minute.
5. Add mushrooms, mix and sauté for 1-2 minutes. Add red chilli powder and turmeric powder and mix well.
6. Add soaked soya chunks and mix well. Add paneer masala and mix and cook for 1 minute.
7. Add cottage cheese cubes and gently mix. Drain and add soaked rice along with 3 cups water and adjust salt. Mix gently and cook till the mixture comes to a boil. Reduce the heat to low, cover and cook further for 10-12 minutes.
8. Switch the heat off, transfer the rice on a serving plate and garnish with coriander sprigs and serve hot with raita.
