Protein Toast Healthy Recipe Breakfast Recipe Sanjeev Kapoor Khazana

Your protein fix just got a smart look! Moong dal as a delicious, spicy spread toasted with sesame just for that slight crunch. So unlike the way you have eaten moong so far right?

PROTEIN TOAST

Ingredients

2 cups soaked split skinless green gram (dhuli moong dal)
4 large white bread slices
1 inch ginger, roughly chopped
2 green chillies, stemmed
4-5 garlic cloves
tsp turmeric powder
1 tsp red chilli powder
Salt to taste
tsp cumin powder
1 medium onion chopped
1 small tomato, chopped
1 small green capsicum, seeded and chopped
1 small carrot, peeled and grated
2 tbsps chopped fresh coriander leaves
White sesame seeds to sprinkle
Butter for cooking
Tomato ketchup for serving

Method

1. Transfer dal in a blender jar, add ginger, green chillies, garlic, cup water and grind to coarse paste.
2. Transfer in a bowl. Add turmeric powder, red chilli powder, salt, cumin powder and mix well.
3. Add onion, tomato, capsicum, carrot and mix well. Add coriander and mix well.
4. Place bread slices on worktop and apply spread the moong dal mixture evenly.
5. Heat a nonstick tawa. Place the prepared bread with topping, sprinkle white sesame seeds, add some butter, cover and cook on medium heat for 2-3 minutes or till underside is golden brown.
6. Flip, add some more butter and cook on other side for 3-4 minutes on medium heat.
7. Cut into triangles and serve hot with tomato ketchup.
