PUMPKIN JAM

Ingredients

400 grams red pumpkin, peeled and cut into 1 inch cubes
1 inch cinnamon stick
3-4 green cardamoms
A pinch of salt
1 cup sugar
2 tsps lemon juice
¼ tsp dry ginger powder
Toasted bread slices to serve
Coffee to serve

Method

1. Dry roast cinnamon stick and green cardamoms in a non-stick pan till they are fragrant. Add pumpkin cubes and mix well.
2. Add salt, and sauté on high heat for 2-3 minutes. Add 1 cup water and and mix well. Cover and cook for 12-15 minutes or till pumpkin becomes soft and pulpy. Discard the cinnamon stick and green cardamoms.
3. Take the pan off the heat and allow the pumpkin to cool slightly. Transfer it into a blender jar and blend to a fine paste.
4. Heat sugar and 1 cup water in a non-stick pan. Cook till the sugar melts and the mixture reaches 1 string consistency.
5. Add the blended paste, mix and cook till the mixture thickens. Add lemon juice and dry ginger powder and mix well. Cook for 2 minutes.
6. Take the pan off the heat and allow the jam to cool completely.
7. Store in an air tight container and serve with toasted bread.
