This version of kaddu ki sabzi made is Punjabi style is going to be your favourite. It's easy to make & delicious to eat!
PUNJABI KADDU KI SABZI

Ingredients

500 grams red pumpkin (kaddu), peeled and cut into ½ inch cubes
2 tbsps ghee
1 tsp cumin seeds
1 tbsp roasted and crushed coriander seeds
2 medium onions, chopped
1 tbsp crushed ginger-garlic-green chillies
2 medium tomatoes, chopped
Salt to taste
½ tsp turmeric powder
1 tsp red chilli powder
½ tsp cumin powder
½ tsp Tata Sampann Garam Masala
2 tbsps chopped fresh coriander
Coriander sprig for garnish
Chapati for serving

Method

1. Heat ghee in nonstick pan. Add cumin seeds, coriander seeds and mix well.
2. Add onions and sauté till translucent. Add ginger-garic- green chilli mixture and sauté for 2-3 minutes on medium heat.
3. Add tomatoes, salt and mix well. Cover and cook till tomatoes are pulpy.
4. Add turmeric powder, red chilli powder and cumin powder and mix well.
5. Add ¼ cup water and mix. Add pumpkin, ½ cup water and mix.
6. Cover and cook on medium heat for 10-15 minutes.
7. Adjust salt, add Tata Sampann Garam Masala, coriander and mix well.
8. Transfer into serving bowl, garnish with coriander sprig and serve hot with chapati.
