Punjabi Lobiya Beans Curry Recipe | Vegan Recipe (Black Eyed Beans) | Eat East Indian

Lobiya Beans (Black Eyed Beans) Curry is easy to make. It is Protein Rich, Full of fiber, Tasty and Vegan. I make a big batch and store the left overs in fridge ( freezer) and do the tadka again before consuming it. This curry is lovely with parantha or rice.

Ingredients/ Method

2 cups of uncooked beans soaked in water overnight
1 large onion
2-3 tbsp oil
1 bay leaf
small piece of ginger
3-4 cloves of garlic
3 tomatoes pureed
Salt per taste
1 tsp turmeric
1 tsp red chilli powder
1 tsp garam masala
1 tsp curry powder
2 tsp cumin seeds
1 tsp crushed coriander seeds
Cilantro for garnish

- Heat oil in the pressure cooker. Add cumin and coriander.
- Add bay leaf. Mix well. Add onions.
- Add Ginger- garlic paste ( we grinded ginger and garlic pieces with little bit of water to make the paste)
- Blend 3 tomatoes with 1/2 cup water to make tomato puree too.
- Add Salt, turmeric and red chilli powder along with onions.
- Cook for 3-4 mins.
- Add tomato puree. Mix well. cook for 2-3 mins.
- Add beans, garam masala and curry powder. Add water if required. Add some cilantro leaves. Cover and cook for 3-4 whistles. Once it has cooled down then open the pressure cooker..Garnish with cilantro and serve.
