Potato bhaji rolled in puris and deep-fried to make a Indian style spring roll..

PURI BHAJI SPRING ROLL

Ingredients

Whole wheat flour dough as required
3-4 medium potatoes, boiled, peeled and mashed
1 tablespoon oil
5-7 curry leaves
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1-2 green chillies, finely chopped
¼ teaspoon turmeric powder
Salt to taste
1 tablespoon chopped fresh coriander leaves
Oil for deep-frying + for greasing

Method

1. Heat oil in a non-stick pan. Add curry leaves, mustard seeds, cumin seeds and let mustard seeds splutter. Add green chillies and turmeric powder and sauté for 30 seconds.
2. Add potatoes, mix and cook for 1 minute. Add salt and mix. Add chopped coriander and mix well. Remove from heat and cool.
3. Heat sufficient oil in a kadai.
4. Divide the dough into equal portions and shape them into balls.
5. Grease the worktop with some oil, place each ball and roll out to make a thin disc.
6. Divide the potato mixture into equal portions and put a portion of potato mixture in the centre of each disc and fold.
7. Deep-fry each spring roll in hot oil till golden and crisp. Drain on absorbent paper.
8. Serve hot.
