Potato bhaji rolled in puris and deep-fried to make a Indian style spring roll..PURI BHAJI SPRING ROLLIngredientsWhole wheat flour dough as required3-4 medium potatoes, boiled, peeled and mashed1 tablespoon oil5-7 curry leaves1 teaspoon mustard seeds1 teaspoon cumin seeds1-2 green chillies, finely chopped¼ teaspoon turmeric powderSalt to taste1 tablespoon chopped fresh coriander leavesOil for deep-frying + for greasingMethod1. Heat oil in a non-stick pan. Add curry leaves, mustard seeds, cumin seeds and let mustard seeds splutter. Add green chillies and turmeric powder and sauté for 30 seconds.2. Add potatoes, mix and cook for 1 minute. Add salt and mix. Add chopped coriander and mix well. Remove from heat and cool. 3. Heat sufficient oil in a kadai.4. Divide the dough into equal portions and shape them into balls. 5. Grease the worktop with some oil, place each ball and roll out to make a thin disc. 6. Divide the potato mixture into equal portions and put a portion of potato mixture in the centre of each disc and fold. 7. Deep-fry each spring roll in hot oil till golden and crisp.
