Queso Fundido with Chorizo - Mexican Cheese Dip Recipe

Here are the ingredients you'll need for this Mexican cheese dip recipe, which makes a much better Superbowl recipe than that nasty Nacho cheese dip you get on the supermarket aisle.

1/2 pound Monterey Jack cheese, grated
10 oz. best quality chorizo (or soy chorizo) this can be omitted from the recipe
1 onion, minced finely
2 jalapenos, seeded and minced (reserve one for garnish)
1/3 cup good-quality Mexican beer or tequila
1 teaspoon garlic-shallot puree, or 1 clove of minced garlic
1 tomato, seeded and diced
2 tablespoons cilantro, minced (plus more for garnish)
