Quick Easy Thai Noodle Salad Recipe | Vegan and Healthy | Eat East Indian

I love Noodles and here i share with you a very easy and tasty Noodles recipe- I call it Thai style Noodle Salad which makes for a quick and easy lunch and perfect to munch on.

Ingredients:

1-2 pack of plain noodles
1-2 cup fresh veggies ( I used cilantro, green onions, long thin strips of cucumber, carrots and bell peppers peppers)
2-3 tbsp soy sauce
2 tbsp sesame seeds
2 tbsp peanut butter
2 tbsp lemon juice
1 tsp salt
2 tbsp crushed/chopped peanuts
1 tsp black pepper
( optional)

Begin by boiling noodles and set them aside.
Mix in green onions, veggies and cilantro. Add in Soy sauce, sesame seeds and peanut butter. Squeeze in lemon. Garnish with crushed peanuts and cilantro and serve chilled.
