QUICK LUNCH IN 30 MINUTES | Indian Mom's Kitchen

Bored of having the same menu for lunch day in and day out during these pandemic times? Well, here is something different. It's simple. It's flavourful. The whole meal can be assembled within 30 minutes. Your family will really enjoy it. The Dal is so flavourful that people tend to consume more of this dal than the rice. Though this meal is complete on its own, you may add some papad and achar or pickle if you so like it. So what are we waiting for? Let's rush into the kitchen right away and start making this quick lunch in 30 minutes.

Ingredients in the order of instructions:
1&1/2 cups Rice
FOR THE DAL:
1 cup Tuvar Dal
3 cups Water
Salt to taste
1/2 tsp Haldi/Turmeric powder
3 tbsp Oil
1 tsp Mustard/Rai seeds
1 tsp Jeera/Cumin
1/2 tsp Hing/Asafoetida
2 Tej Patta/Bay leaves
3 dry red Chillies
3 Dalchini/Cinnamon sticks
1/2 Star Anise/Chakr phool
3 Cloves/Laung
Few Kadipatta/Curry leaves
1 tbsp grated Ginger/Adarak
4 Green Chillies/Hari Mirch
2 Tomatoes
Salt to taste
1/4 tsp Haldi/Turmeric powder
1 tsp Sugar
A handful of chopped Coriander leaves
1/2 cup roasted Peanuts
Juice of 1 Lemon
POTATO SABZI:
2 tbsp Oil
1/2 tsp Mustard/Rai seeds
1/2 tsp Jeera/Cumin
2 Green Chillies/Hari Mirch
Few Kadipatta/Curry leaves
4 Potatoes
1/2 tsp Kashmiri Chilli powder
1/2 tsp Dhania/Coriander powder
1/4 tsp Haldi/Turmeric powder
1/2 tsp Jeera/Cumin powder
Salt to taste
Few Coriander leaves
