Quick Miso Simmered Daikon

Difficulty: Very Easy
Time: 1hr
Number of servings: 4

Ingredients:
800g (1.8lb.) Daikon
1 tbsp. ginger juice
500ml Kombu Dashi (Vegan Dashi) *I recommend RIKEN Kombu Dashi Powder https://amzn.to/31o8bx8
3 tbsp. Mirin (sweet Sake)
2 tbsp. soy sauce
2 tbsp. Miso

Directions:
1. Dice Daikon.
2. In a large pot, put Daikon, Kombu Dashi (Vegan Dashi), Mirin (sweet Sake), and ginger juice. Cover with a drop lid (aluminum foil is ok) and simmer on low for 15 minutes until soft.
3. Add soy sauce, cover with a drop lid again and simmer on medium for 20 minutes.
4. Add Miso and simmer for a few minutes to finish.

It becomes very tasty if you leave it in a pot for a few hours or a day. You can keep it in a fridge for 2~3 days.
