As the name suggests, this is a quick and tasty tomato chutney that you can use as an accompaniment for various dishes.QUICK TOMATO CHUTNEYIngredients3 medium tomatoes, chopped2 tsps oil1 tsp cumin seeds½ tsp mustard seeds¼ tsp onion seeds (kalonji)A pinch of fenugreek seeds (methi dana)1 medium onion, chopped½ inch ginger, crushedSalt to taste½ tsp red chilli powderA pinch of turmeric powder1 tsp Tata Sampann Coriander Powder½ tsp fennel seeds (saunf)A pinch of asafoetida (hing)¼ tsp black saltA pinch of black pepper powder2 tsps honeyFresh coriander sprig for garnishMethod1. Heat oil in a non-stick pan, add cumin seeds and mustard seeds. Once the mustard seeds splutter, add onion seeds and fenugreek seeds.2. Add onion and mix, add green cardamoms and sauté for 1-2 minutes or till the onion turns translucent.3. Add ginger and sauté for 30 seconds. Reduce the heat to low, add salt, red chilli powder, turmeric powder, Tata Sampann Coriander powder, fennel seeds and asafoetida and mix well.4. Add tomatoes, mix, cover and cook for 5-6 minutes or till the tomatoes turn soft and pulpy. 5. Mash the tomato mixture lightly with the back of a spoon, add ¼ cup water, mix and continue to mash lightly. 6. Add black salt and black pepper powder, mix well and cook for 2-3 minutes. 7. Add honey, mix and switch the heat off. Transfer into a serving bowl, garnish with coriander sprig and serve as required.
