Quinoa Chicken Nuggets | Sanjeev Kapoor Khazana

Chicken pieces dipped into egg batter coated with quinoa and deep fried.

QUINOA CHICKEN NUGGETS

Ingredients

¾ cup cooked quinoa
250 grams boneless chicken, cut into 1½-2 inch pieces
Oil for deep-frying
5 tablespoons refined flour
Salt to taste
Crushed black peppercorns to taste
2 eggs

Method

1. Heat sufficient oil in a pan.
2. Combine flour, salt and crushed peppercorns in a bowl and mix.
3. Break eggs in another bowl and whisk.
4. Dip chicken pieces in egg mixture, coat with flour mixture and dip again in egg mixture. Coat the prepared pieces with quinoa.
5. Deep-fry prepared chicken pieces in hot oil till golden and crisp. Drain on absorbent paper.
6. Serve hot with tomato ketchup.
