Quinoa Skillet

This protein rich and delicious Quinoa skillet is so easy to make. It is full of flavor and is a perfect dinner for busy weeknights.
You can prepare this within 30 minutes with the regular pantry ingredients and available vegetables.

Ingredients:
Quinoa-1 cup
Water-1 cup
Oil- 2 teaspoon
Cumin/Jeera-1 teaspoon
Onion-1
Garlic cloves-2
Corn-1/2 cup
Black beans-1 cup
Diced tomatoes with green chilies- 10 oz can
Turmeric powder-1 teaspoon
Salt-1 teaspoon
Coriander powder-1 teaspoon
Cumin/Jeera powder- 1 teaspoon
Red chilly powder- 1 teaspoon




Directions:
1. Heat 2 tsp oil in a pan/pot. Add 1 tsp jeera, onion and garlic. Sauté until translucent.
2. Add corn, black beans, diced tomatoes with green chillies, Turmeric powder, salt, coriander powder, cumin powder and red chilli powder.
3. Give it a stir, then add 1 cup water, 1 bell pepper and 1 cup quinoa.
4. Close the lid and cook until the water evaporates completely.
Serve with Avocado slices.
