RAGDA BOWLIngredients1 cup dried white peas, soaked overnight and drained½ teaspoon turmeric powderSalt to taste1 tablespoon oil1 medium onion, finely chopped1 teaspoon cumin seeds1 tablespoon ginger-garlic paste1 medium tomato, chopped1 tablespoon chole masala½ teaspoon chaat masalaJuice of ½ lemon2 cups French friesA pinch turmeric powderMint chutney as requiredDate-tamarind chutney as required12 lavash Sev for sprinklingFresh mint sprigs for garnishing Method1. To prepare ragda, take white peas in a pressure cooker. Add 2 cups water, ¼ teaspoon turmeric powder and salt and cover. Place on heat and cook till 3-4 whistles are released.2. Heat oil in a non-stick pan. Add onion and sauté for 1 minute. Make some space in the centre, add cumin seeds and sauté for 2-3 minutes or till onion turns translucent.3. Add ginger-garlic paste and sauté for 30 seconds. Add tomato and sauté for 1 minute. Add chole masala and sauté for 1 minute. 4. Add 2-3 tablespoons water, mix and cook for 1 minute. Add cooked white pea mixture, mix and cook for 1-2 minutes.5. Add ¼ cup water and mix. Add salt, mix, lightly mash with the back of spatula and cook for 5-7 minutes. Switch off heat, add chaat masala and lemon juice and mix well.6. Take French fries in a bowl. Add salt and turmeric powder and toss well.7. Put ½ cup French fries in individual bowls and pour some radga on top. Put some mint chutney and date-tamarind chutney on top. 8. Place 3 lavash on the sides of each prepared bowl and sprinkle some sev on top.9.
