RAGI BISCUITSIngredients½ cup finger millet (ragi)flour Oil for greasing½ cup whole wheat flour1 teaspoon baking powder½ cup chilled butter½ cup powdered sugarFew drops vanilla essenceMilk as requiredMethod1. Preheat oven at 180ºC. Grease a baking tray with some oil.2. Heat millet flour in a non-stick pan and roast on low heat till fragrant. Remove from heat and cool.3. Sieve together wheat flour, roasted millet flour and baking powder into a bowl and mix well. 4. Roughly chop chilled butter, add to flour mixture and mix well. Sieve powdered sugar into it. Add vanilla essence and some milk, mix and knead into a soft dough. Cover with cling film and refrigerate for 20 minutes.5. Dust a worktop with some flour, place the dough and roll out to make a thin sheet. Cut the sheet into roundels using a medium size cookie cutter and put them on the greased tray. 6. Place the baking tray in preheated oven and bake for 12-15 minutes. Remove from heat and cool. 7.
