रायतुआ | Raitua | Sanjeev Kapoor Khazana

This unique local chaas recipe from certain parts of Uttar Pradesh, is made using bottle gourd. Especially made during summer, this is a cooling and refreshing drink.

RAITUA (DOODHI CHAAS)

Ingredients

250 grams bottle gourd (doodhi), peeled and grated
2 cups chilled yogurt
1 tsp roasted cumin powder
¼ tsp asafoetida (hing)
Black salt to taste

Method

1. Boil water in a deep nonstick pan. Add grated bottle gourd and cook for 2-3 minutes.
2. Drain in chilled water and set aside.
3. Take yogurt in a bowl. Add roasted cumin powder, hing, black salt and whisk well.
4. Squeeze the excess water from the boiled bottle gourd and add to the bowl.
5. Add 3 cups chilled water and mix well.
6. Transfer into individual glasses and serve chilled.
