Rajasthani Mogar Ki Sabzi - Rajasthani Recipe in Hindi | MintsRecipes

Mogar ki sabzi is generally made along with Kesaria meetha chaval. Mogar is made with Moong Dal. Mogar is a popular Rajasthani traditional recipe.

Ingredients:
500 gm yellow Moong Dal (Split yellow gram) washed and soaked for two hours
3 tbsp oil
½ tsp of fenugreek seed
½ tsp of fennel seed
3-4 pieces of cloves
2 piece of dry red chilies (break into pieces)
1 piece of Bay leaf
½ tsp asafoetida (Hing)
Salt to taste
1 tsp of coriander powder
11/2 tsp red chili powder
1/2 tsp turmeric powder (Haldi)
½ tsp of garam masala
How to make Mogar:
1. Heat oil in a pressure cooker.
2. When the oil becomes hot, add fenugreek seed, fennel seed and let it splutter.
3. Once the seeds start spluttering add cloves, dry red chilly pieces, bay leaf, asafoetida and lastly add soaked moong dal with ½ cup of water.
4. Now add all the spices- salt to taste, turmeric powder, Coriander powder, red chilly powder, garam masala and mix it well and cook for a minute.
5. Close the lid of pressure cooker and cook on medium flame till 2 whistles. Do not let the dal overcook. Or else it will get mashed.
6. Once the cooker is cooled, open the cooker, and mix very lightly.
7. Serve hot with roti or rice but it goes really well with Rajasthani sweet saffron rice
