Rajgira Ladoo Recipe - Ramdana Ladoo Recipe - Amaranth Seeds Laddu Recipe | Nisha Madhulika

Rajgira ladoos are easy and delicious ladoos made with puffed rajgira seeds. Amaranth is gluten-free and very healthy grain and these ladoos are made for navratri vrat.

Ingredients
Rajgira – 1 cup
Jaggery – 1 cup
Ghee – 2-3 tsp
Raisins – 2 tbsp
Cashews – 2 tbsp

Directions

Getting ready:

1.Chop the cashews into small chunks, keep them in a bowl.

Making:

2.Start with roasting 1 tsp of rajgira at a time in a sufficiently hot heavy base pan. Keep stirring continuously until they puff up well. Then sieve roasted rajgira in small amount and keep the puffed rajgira in a bowl.

3.To prepare jaggery syrup, heat 2 tsp of ghee in a wok and put the crumbled jaggery to it. As the jaggery melts, add 2 tbsp of water in the wok and cook for a while. Later, turn off the flame and strain the syrup through a sieve in the same bowl with rajgira.

4.Put cashews and raisins in the bowl and mix everything really well. Bind firm ladoos from the mixture with wet hands and place them on a plate. Rajgira ladoos are done and now ready to be served.

Serving:

5.Serve these mouth-melting rajgira ladoos on a fasting day or whenever you want. Everyone will surely like eating these ladoos.

Suggestions

Use the unpuffed rajgira left for making panjiri. Grind it into fine powder and add boora to make panjiri or that powder in sugar syrup to make barfi.
