Whole wheat rotis, cheese spread and a delicious baked beans and mixed vegetable filling inside - worth a try.

RAJMA WRAP

Ingredients

4 rotis
½ cup baked beans (rajma)
2 teaspoons oil + for drizzling
½ medium green capsicum, finely chopped
½ medium yellow capsicum, finely chopped
½ medium red capsicum, finely chopped
Salt to taste
½ cup chopped purple cabbage
Crushed black peppercorns to taste
1 teaspoon soy sauce
2 teaspoon red chilli sauce
1 teaspoon tomato ketchup
50 grams cottage cheese (paneer), cut into small cubes
Cheese spread for spreading
Few iceberg lettuce leaves

Method

1. Heat 2 teaspoons oil in a non-stick pan. Add green capsicum, yellow capsicum and red capsicum and sauté for 1 minute.
2. Add salt and sauté for 1 minute. Add purple cabbage and baked beans, lightly mash and cook for 1 minute.
3. Add crushed peppercorns, soy sauce, chilli sauce, tomato ketchup, salt and cottage cheese cubes, mix and cook for 1 minute. Transfer in a bowl and slightly cool.
4. Apply some cheese spread on each roti. Place few torn lettuce leaves in the center of each prepared roti, put some baked beans mixture on top and wrap.
5. Heat a non-stick grill pan. Place the wraps, drizzle some oil on top and cook from both sides till light golden brown.
6. Serve hot.
