Im very happy with it.Raspberry mousse, Fresh raspberries and genoise make the perfect trio! * Ingredients (4 , for 4 person) 200g,, 200ml, 20g, 70g, 35g, 6g , , raspberry mousse : 200g cream cheese, 200ml heavy cream + 20g sugar, 6g gelatin, 70g raspberry puree + 35g sugargenoise (sponge cake) or castella, fresh raspberries and fresh mint leaves for decoration* Recipe1. 5 .1. Soak the gelatin for 5 min or until soft.2. , .2. Warm the raspberry puree on low heat, add sugar and soaked gelatin and mix well.3. .3. Soften the cream cheese.4. .4. Gently fold raspberry puree mixture into (3)cream cheese.5. , (4) .5. Whip the heavy cream with sugar, add and mix (4)raspberry puree mixture into heavy cream.6. .6. Cut rounds out of the genoise or castella using a cutter.7. , , , .7. Fill the cups with genoise, fresh raspberries and raspberry mousse and cool them in the fridge.8. .8.
