Todays menu is Raspberry mousse in a jar.
This dessert is beautiful and lovely. Plus, you dont need an oven. So I like this! :)
I have been obsessed with raspberries. So I made it. Im very happy with it.
Raspberry mousse, Fresh raspberries and genoise make the perfect trio!

* Ingredients (4 , for 4 person)
200g,, 200ml, 20g, 70g, 35g, 6g
, ,
raspberry mousse : 200g cream cheese, 200ml heavy cream + 20g sugar, 6g gelatin, 70g raspberry puree + 35g sugar
genoise (sponge cake) or castella, fresh raspberries and fresh mint leaves for decoration

* Recipe
1. 5 .
1. Soak the gelatin for 5 min or until soft.

2. Warm the raspberry puree on low heat, add sugar and soaked gelatin and mix well.

3. Soften the cream cheese.

4. Gently fold raspberry puree mixture into (3)cream cheese.

5. Whip the heavy cream with sugar, add and mix (4)raspberry puree mixture into heavy cream.

6. Cut rounds out of the genoise or castella using a cutter.

7. Fill the cups with genoise, fresh raspberries and raspberry mousse and cool them in the fridge.

8. Decorate with fresh raspberries and mint. done!
