RAWA DOSA PRE-MIX

Ingredients

1½ cups semolina (rawa)
¾ cup rice flour
¼ cup + 2 tbsps refined flour (maida)
¾ tsp dried ginger granules
¾ tsp cumin seeds
¾ tsp crushed black peppercorns
4tsps salt
18 cashewnuts, roughly chopped
Ghee for drizzling
Sambhar to serve
Coconut chutney to serve

Method

1. In a large bowl, add semolina, rice flour, refined flour, dried ginger, cumin seeds and crushed black peppercorns and salt.
2. Coarsely crush cashew nuts roughly chopped in a mortar and pestle. Add the crushed cashew nuts into the semolina mixture. Whisk till well combined.
3. Transfer the prepared rawa dosa pre-mix into an airtight container and store upto 6-8 days.
4. For making rawa dosa, take 1 cup prepared mixture and 3 cups water, whisk well and set aside for 10 minutes.
5. Heat a non-stick tawa, drizzle a little ghee on it and grease with tissue paper. Pour a ladle of the mixture and spread it evenly. Drizzle a little ghee and cook till the base turns golden brown.
6. Fold in half and transfer on a serving plate. Serve hot with sambhar and coconut chutney.
