The word 'Ravaiya' in Gujarati means stuffed. Here, baby brinjals are stuffed with green chutney and shallow-fried to perfection.

RAVAIYA

Ingredients

8-10 small brinjals, slit into 4 without cutting through
1 cup scraped fresh coconut
3 tbsps chopped fresh coriander leaves
15-20 fresh mint leaves
2-3 garlic cloves
¼ tsp sugar
2 green chillies
1 tsp vinegar
Salt to taste
3 tbsps oil

Method

1. Put coconut in a blender jar, add coriander leaves, mint, garlic, sugar, green chillies, vinegar and salt and blend to a coarse paste. (add a little water if required)
2. Generously stuff each brinjal with the prepared paste. Set aside for 30 minutes.
3. Heat oil in a non-stick pan, add stuffed brinjals and sauté on high heat for 2 mins. Add the remaining blended paste, mix and cook for a minute.
4. Add ¼ cup water, mix, cover and cook on medium heat for 12-15 minutes. Switch the heat off and transfer into a serving bowl.
5. Serve hot.
