RAVAIYAIngredients8-10 small brinjals, slit into 4 without cutting through1 cup scraped fresh coconut3 tbsps chopped fresh coriander leaves15-20 fresh mint leaves2-3 garlic cloves¼ tsp sugar2 green chillies1 tsp vinegarSalt to taste3 tbsps oilMethod1. Put coconut in a blender jar, add coriander leaves, mint, garlic, sugar, green chillies, vinegar and salt and blend to a coarse paste. (add a little water if required)2. Generously stuff each brinjal with the prepared paste. Set aside for 30 minutes.3. Heat oil in a non-stick pan, add stuffed brinjals and sauté on high heat for 2 mins. Add the remaining blended paste, mix and cook for a minute.4. Add ¼ cup water, mix, cover and cook on medium heat for 12-15 minutes. Switch the heat off and transfer into a serving bowl. 5.
