Raw mangoes are in season and it's time to prepare this classic accompaniment from Tamil Nadu.RAW MANGO THOKKUIngredients4 raw mangoes4 tbsps oilA pinch of asafoetida (hing)½ tsp mustard seeds20-25 curry leaves½ tsp turmeric powder1½ tsps red chilli powder¼ tsp fenugreek seeds powder Method1. Deseed and cut the raw mangoes into small pieces.2. Heat 2 tbsps oil in earthenware pan. Add asafoetida, mustard seeds and once the mustard seeds start to splutter, add curry leaves, raw mangoes and mix well. Cook on medium heat for 5-6 minutes.3. Add turmeric powder, red chilli powder and mix well.4. Cover and cook for 10 minutes.5. Heat remaining oil in a small nonstick pan. Add fenugreek seed powder and mix well.6. Add this tempering to the mango mixture and mix well.7.
