Raw mangoes are in season and it's time to prepare this classic accompaniment from Tamil Nadu.
RAW MANGO THOKKU

Ingredients

4 raw mangoes
4 tbsps oil
A pinch of asafoetida (hing)
½ tsp mustard seeds
20-25 curry leaves
½ tsp turmeric powder
1½ tsps red chilli powder
¼ tsp fenugreek seeds powder

Method

1. Deseed and cut the raw mangoes into small pieces.
2. Heat 2 tbsps oil in earthenware pan. Add asafoetida, mustard seeds and once the mustard seeds start to splutter, add curry leaves, raw mangoes and mix well. Cook on medium heat for 5-6 minutes.
3. Add turmeric powder, red chilli powder and mix well.
4. Cover and cook for 10 minutes.
5. Heat remaining oil in a small nonstick pan. Add fenugreek seed powder and mix well.
6. Add this tempering to the mango mixture and mix well.
7. Allow to cool and serve.
