Red Lentil Soup

This healthy Red lentil soup recipe comes together quickly with pantry ingredients. Its nourishing and 100% delicious!

3 tbsp olive oil
1 chopped onion
1 tbsp curry powder
1/8 tsp cayenne pepper
1 tsp salt
3 tbsp tomato paste
1 tbsp maple syrup
3 potatoes, peeled and diced
1 cup of red lentils (200 g)
1-400 ml can of coconut milk
4 cups of vegetable broth (1 liter)
4 cups of kale, cut into bite seize (50 g)

In a saucepan over medium heat, saut the onion in oil for 4 minutes.
Add the curry powder, cayenne pepper, salt, tomato paste and maple syrup.
Mix well and add the potatoes, lentils, coconut milk and vegetable broth.
Bring to a boil, reduce the heat and let simmer for 20 minutes.
Add the kale and continue cooking for 5 minutes or until the potatoes are cooked,
