Red Slaw Sandwich | Sanjeev Kapoor Khazana

Bursting with flavour and nutrients, enjoy this sandwich without feeling guilty.

RED SLAW SANDWICH

Ingredients

1 medium apple, cut into juliennes
¼ medium red cabbage, shredded
½ medium red bell pepper, cut into juliennes
1 red radish, cut into juliennes
1 multigrain baguette
½ medium iceberg lettuce, shredded
1 teaspoon grain mustard
1 tablespoon mayonnaise
Salt to taste
Crushed black peppercorns to taste
Alfalfa as required

Method

1. Halve baguette vertically and cut each halve horizontally into two.
2. Combine apple, red cabbage, iceberg lettuce, red bell pepper, red radish, grain mustard, mayonnaise, salt and crushed peppercorns in a bowl and mix well.
3. Put some apple-cabbage mixture on one bread slice, top with some alfalfa and cover with another slice. Similarly prepare remaining bread slices.
4. Serve immediately.
