METHOD FOR MAKING RICE CUTLETS :
Rice cutlets could be made with leftover rice at home. In a mixing bowl take 1 cup rice. Mash or grate 4 boiled potatoes and mix it with rice. Add 1 diced onion, 1/2 cup coriander, 2 chopped green chillies(optional), chopped ginger piece, 1/2 teaspoon chilli powder, 1/2 teaspoon coriander powder, 1 teaspoon salt, 1/2 teaspoon chat masala, 1/4 teaspoon garam-masala and mix. For binding add 2 tablespoons corn flour or all purpose flour and mix. Mould the dough into desired shapes as shown. In a plate, take bread crumbs as shown. Breadcrumbs are powdered bread pieces. In a bowl, take 2 tablespoons cornflour, add half cup water and mix. Take the previously prepared cutlet pieces, dip them in corn flour, Roll them in bread crumbs and press as shown. To a pan add oil necessary for deep fry and fry the cutlets one by one. These cutlets could be shallow fried also. Serve with sauce!!
