A crunchy snack which is made with rice flour & some selected desi spices. It pairs well with your sham ki chai!

RICE KADBOLE

Ingredients

2 tsps oil + for drizzling
1 tsp cumin seeds
3-4 green chillies, crushed
2 tbsps chopped fresh coriander leaves
1 cup buttermilk
Salt to taste
1 cup rice flour

Method

1. Heat oil in a deep pan. Add cumin seeds and let the colour change.
2. Add green chillies and coriander leaves and sauté for a few seconds. Add buttermilk and salt and mix well. Let it come to a boil.
3. Add rice flour and mix till well combined. Cover and let it steam on low heat for 2-3 minutes.
4. Transfer the mixture in a parat and knead with a back of a spatula till the mixture cools down slightly.
5. Continue to knead with your hands while the mixture is still warm and it comes together like a dough. Drizzle a little oil and knead again. Cover with a damp muslin cloth and set aside for 5-10 minutes.
6. To make kadbole, take a small portion of the dough and shape it into a log of medium thickness. Bring both the ends together to make a ring with one end slightly overlapping the other.
7. Heat sufficient oil in a kadai. Gently slide in the kadbole a few at a time and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper.
8. Allow the kadbole to cool to room temperature. Store in air tight jar and serve as required.
