Rice Noodle Fritters | Sanjeev Kapoor Khazana

RICE NOODLE FRITTERS - (Serves - 4)

Ingredients

250 grams rice vermicelli
Oil for deep-frying
1-2 fresh red chillies, finely chopped
1 teaspoon roasted crushed fennel seeds
1 teaspoon roasted crushed cumin seeds
Crushed black peppercorns to taste
1 small onion, finely chopped
Salt to taste
1 egg white
Sweet chilli sauce for serving

Method

1. Take vermicelli in a bowl. Add warm water, cover with cling film and keep till vermicelli softens.
2. Heat sufficient oil in a pan.
3. Strain the soaked vermicelli in a bowl and roughly chop. Transfer in a bowl.
4. Add red chillies, crushed fennel seeds, crushed cumin seeds, crushed peppercorns, onion and salt and mix. Add egg white and mix well.
5. Put a spoonful of vermicelli mixture directly into hot oil and deep-fry till golden and crisp. Drain on absorbent paper. Similarly, prepare fritters from the remaining mixture. .
6. Serve hot with sweet chilli sauce.
