RICE NOODLE FRITTERS - (Serves - 4)Ingredients250 grams rice vermicelli Oil for deep-frying1-2 fresh red chillies, finely chopped1 teaspoon roasted crushed fennel seeds1 teaspoon roasted crushed cumin seedsCrushed black peppercorns to taste1 small onion, finely choppedSalt to taste1 egg whiteSweet chilli sauce for servingMethod1. Take vermicelli in a bowl. Add warm water, cover with cling film and keep till vermicelli softens.2. Heat sufficient oil in a pan.3. Strain the soaked vermicelli in a bowl and roughly chop. Transfer in a bowl. 4. Add red chillies, crushed fennel seeds, crushed cumin seeds, crushed peppercorns, onion and salt and mix. Add egg white and mix well.5. Put a spoonful of vermicelli mixture directly into hot oil and deep-fry till golden and crisp. Drain on absorbent paper. Similarly, prepare fritters from the remaining mixture. . 6.
