Rice Stuffed Omelette | Sanjeev Kapoor Khazana

Egg omelette stuffed with tangy tomato rice and served.

RICE STUFFED OMELETTE

Ingredients

1 cup cooked rice
8 eggs
1 tablespoon oil + as required
4-6 garlic cloves, roughly chopped
1 medium onion, finely chopped
½ cup tomato puree
4-5 sausages, cut into small pieces
2 tablespoons tomato ketchup
1 teaspoon fresh thyme
Salt to taste
Crushed black peppercorns to taste
2-3 tablespoons milk

Method

1. Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté for 10 seconds. Add onion and sauté for translucent.
2. Add tomato puree, mix and cook for a minute. Add sausages, mix and cook for a minute. Add tomato ketchup and mix. Add rice, fresh thyme, salt, crushed peppercorns, mix and cook for a minute.
3. Break eggs in a bowl. Add milk, crushed peppercorns and salt and whisk well.
4. Heat some oil in another non-stick pan. Pour egg mixture, lightly mix and cook till egg is fully done. Put some rice mixture on one side of egg omelette and fold it.
5. Slice and serve hot.
