Egg omelette stuffed with tangy tomato rice and served.RICE STUFFED OMELETTEIngredients1 cup cooked rice8 eggs1 tablespoon oil + as required4-6 garlic cloves, roughly chopped1 medium onion, finely chopped½ cup tomato puree4-5 sausages, cut into small pieces2 tablespoons tomato ketchup1 teaspoon fresh thymeSalt to tasteCrushed black peppercorns to taste2-3 tablespoons milkMethod1. Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté for 10 seconds. Add onion and sauté for translucent. 2. Add tomato puree, mix and cook for a minute. Add sausages, mix and cook for a minute. Add tomato ketchup and mix. Add rice, fresh thyme, salt, crushed peppercorns, mix and cook for a minute. 3. Break eggs in a bowl. Add milk, crushed peppercorns and salt and whisk well.4. Heat some oil in another non-stick pan. Pour egg mixture, lightly mix and cook till egg is fully done. Put some rice mixture on one side of egg omelette and fold it.5.
