On the festive occasion of Christmas, learn how to make whole Roast Chicken at home in oven from our chef Smita Deo on Ruchkar Mejwani. Roast Chicken is an easy to make chicken recipe where whole chicken is marinated in olive oil, garlic paste and fresh herbs. The chicken is served with roasted vegetables and onion sauce.Ingredients:1 Whole Chicken1/2 Cup Extra Virgin Olive Oil1 tbsp Garlic Paste1 tbsp Black Pepper PowderThyme HerbSalt to taste1 Lemon1 Bunch of GarlicBroccoli, blanched for 5 minutes1 Red Capsicum, chopped2-3 Carrots, choppedBaby Potatoes, cut into halfFor Gravy2 Onions, chopped3 tbsp White Vinegar3 tbsp Worcestershire Sauce1 inch Cinnamon10 Cloves1/2 tsp Black Pepper Powder2 tbsp Corn Flour1/2 litre Chicken StockMethod:- In a baking dish place the whole chicken- In a bowl add extra virgin olive oil, garlic paste, black pepper powder & salt. Mix everything well.- Apply this marinate onto the chicken along with thyme.- Stuff the chicken with a whole lemon and a bunch of garlic.- Apply little of the marinate to the chopped vegetables like baby potatoes, broccoli, red capsicum and carrots. Place these vegetables alongside the chicken.- Roast the chicken in an oven for 25-30 minutes on 200 degrees Celsius.- To make the sauce in a pan add chopped onion, white vinegar, Worcestershire Sauce, cinnamon, cloves, black pepper & chicken stock.
