Chef Shantanu Gupte brings you an easy, hassle-free recipe for the perfect roast potatoes that taste delicious.Roasted Potatoes Ingredients:4-5 parboiled potatoes3-4 tbsp oil3-4 tbsp butter (oil and butter should be in the same quantity)1-2 sprigs of rosemarysalt and pepper to taste1 garlic - finely choppedrosemary leaves - finely chopped5-6 cherry tomatoes10-12 olives1 tbsp honeyparsley - finely chopped for garnishMethod:- Boil the potatoes for 2-3 minutes. - In a pan, heat the oil and an equal quantity of butter.- Once the butter melts, add the parboiled potatoes to it.- Add the sprigs of rosemary, salt to taste and freshly cracked black pepper to the above ingredients and let them cook. - Once the potatoes turn slightly brown in color, drain the excess oil from the potatoes and place them on the baking tray. - Spread out the potatoes and sprinkle chopped garlic, finely chopped rosemary leaves, salt, and pepper over them.- Add the whole cherry tomatoes and the olives and also pour the oil in which the potatoes had been cooked. - Roast the potatoes at the temperature of 200 degrees Celsius for about 8-10 minutes.- After about 10 minutes, add honey to the potatoes and mix well.- Put the tray back in the oven at a temperature of 250 degrees Celsius to make the potatoes crisp. - Take the potatoes out on absorbent paper.
