Soft within and crisp from the outside with a perfect blend of flavours will give you a reason to crave these roasties. Chef Shantanu Gupte brings you an easy, hassle-free recipe for the perfect roast potatoes that taste delicious.

Roasted Potatoes Ingredients:

4-5 parboiled potatoes
3-4 tbsp oil
3-4 tbsp butter (oil and butter should be in the same quantity)
1-2 sprigs of rosemary
salt and pepper to taste
1 garlic - finely chopped
rosemary leaves - finely chopped
5-6 cherry tomatoes
10-12 olives
1 tbsp honey
parsley - finely chopped for garnish

Method:

- Boil the potatoes for 2-3 minutes.
- In a pan, heat the oil and an equal quantity of butter.
- Once the butter melts, add the parboiled potatoes to it.
- Add the sprigs of rosemary, salt to taste and freshly cracked black pepper to the above ingredients and let them cook.
- Once the potatoes turn slightly brown in color, drain the excess oil from the potatoes and place them on the baking tray.
- Spread out the potatoes and sprinkle chopped garlic, finely chopped rosemary leaves, salt, and pepper over them.
- Add the whole cherry tomatoes and the olives and also pour the oil in which the potatoes had been cooked.
- Roast the potatoes at the temperature of 200 degrees Celsius for about 8-10 minutes.
- After about 10 minutes, add honey to the potatoes and mix well.
- Put the tray back in the oven at a temperature of 250 degrees Celsius to make the potatoes crisp.
- Take the potatoes out on absorbent paper. Add some chopped parsley to it and give it a toss.
- The crispy roast potatoes are ready to be served.
