All the way from the Kashmiri Kitchen, this Rogan Josh recipe is hearty, wholesome, so flavourful and extremely comforting.ROGAN JOSHIngredients750 grams mutton on the bone, cut into 2 inch pieces¼ cup rattan joth, soaked in sufficient water8-10 crushed garlic cloves6-7 green cardamoms4-5 cloves2 inch cinnamon stick1 black cardamomSalt to taste2 ½ tbsps ghee¼ cup browned onion paste3-4 tbsps kashmiri red chilli pasteA large pinch of saffron1 tbsp kewra water1 tsp green cardamom powder + for sprinklingMint sprig for garnishMethod1. Heat a non-stick pan, add the mutton pieces, sufficient water and mix well. Let it come to a boil. Switch the flame off and strain the mutton. 2. Heat another non-stick pan; add the strained mutton and sufficient water. Add garlic cloves, green cardamoms, black cardamoms, cloves, cinnamon stick, salt, and mix well. Let it cook on low flame for 20-25 minutes.3. Heat ghee in another pan, add browned onion paste, and sauté well.4. Add kashmiri red chilli paste, sauté well for 1-2 minutes or till the ghee separates.5. Add rattan joth water and mix well. Add the cooked mutton pieces along with the stock in the onion-red chilli mixture and mix well. 6. Add salt, saffron, kewra water, green cardamom powder, and mix well. Cook for 10-15 minutes.7. Garnish with mint sprig and sprinkle a little green cardamom powder.
