ROSEMARY PANNACOTTA

Ingredients

2-3 fresh rosemary sprigs
2 cups fresh cream
1 cup chopped white chocolate
1 cup chopped strawberries
1/3 cup castor sugar
1 tsp lemon juice

Method

1. Heat a non-stick pan, add fresh cream, rosemary sprig, and cook for 2-3 minutes and Discard rosemary.
2. Add white chocolate and cook until chocolate melts. Take the pan off the heat.
3. Strain the mixture into a jar, pour this into individual serving glasses till ½ filled. Refrigerate till set.
4. Heat a non-stick pan, add strawberry, castor sugar, and lemon juice and mix well. Add ¼ cup water, mix and cook for 2-3 minutes or till the strawberries soften. Take the pan off the heat and allow the mixture to cool completely.
