Rosti Chicken | Sanjeev Kapoor Khazana

Marinated chicken pieces coated with grated potatoes and shallow fried to make this interesting recipe.

ROSTI CHICKEN

Ingredients

2 boneless chicken breasts
2-3 medium potatoes, parboiled
2 tablespoons refined flour + for dusting and sprinkling
Salt to taste
Crushed black peppercorns to taste
2 eggs
Oil for shallow-frying

Method

1. Peel and grate half the potato. Add refined flour and mix.
2. Sprinkle salt and crushed peppercorns on the chicken breasts.
3. Break eggs in a bowl and whisk well.
4. Heat some oil in a non-stick pan.
5. Spread some flour on a plate.
6. Dust the chicken breasts with the flour, dip in the eggs and coat with the grated potatoes. Grate remaining potatoes on the chicken. Sprinkle some more flour and salt over the grated potato and press well.
7. Shallow-fry prepared chicken in hot oil till golden and crisp. Drain on absorbent paper.
8. Serve hot.

Preparation time: 8-10 minutes
Cooking Time:12-15 minutes
