ROTI PIZZA

Ingredients

1 cup whole wheat flour (atta)
½ cup refined flour (maida)
Pizza sauce for spreading
4-5 fresh basil leaves, chopped
1 teaspoon dried basil leaves
1½ teaspoons dried oregano
1 teaspoon red chilli flakes
½ tablespoon parmesan cheese powder
Salt to taste
2 teaspoons oil
1 tablespoon olive oil
¼ cup finely chopped mixed capsicum (red, yellow and green)
1 fresh jalapeno, seeded and finely chopped
¼ cup baked beans
100 grams cottage cheese, cut into small pieces
½ cup grated processed cheese
100 grams mozzarella cheese

Method

1. Mix together wheat flour and refined flour, half of fresh basil leaves, ½ teaspoon dried basil leaves, 1 teaspoon dried oregano, ½ teaspoon chilli flakes, salt, parmesan cheese and 2 teaspoons oil in a bowl. Add sufficient water and knead into a semi-soft dough.
2. To prepare topping, heat olive oil in a non-stick pan. Add mixed capsicum and jalapeno and sauté for 1 minute.
3. Add baked beans and mix. Add remaining dried basil leaves, remaining dried oregano and remaining chilli flakes and mix. Add salt, mix and cook till mixture dries.
4. Add cottage cheese and remaining basil leaves and mix well. Transfer in a bowl.
5. Heat a non-stick tawa.
6. Divide the dough into large equal portions and roll out into semi-thick disc.
7. Place each disc on hot tawa and roast from both sides till light golden brown. Spread some pizza sauce, processed cheese and topping mixture on top. Grate some mozzarella cheese and again spread some processed on top, cover and cook till the cheese melts.
8. Cut into wedges and serve hot.
