Rushichi Bhaji - ऋषीची भाजी | Gauri Ganpati Recipe by Archana | Maharashtrian Vegetable in Marathi | Ruchkar Mejwani

Rushichi Bhaji is a no onion no garlic authentic Maharashtrian vegetable / sabzi recipe made during Rushi Panchami which is the 2nd day of Ganesh Chaturthi. Our chef Archana shows you how to make rushichi bhaji with lots of fresh vegetables and a hint of green chilli.

Ingredients:

2-3 tbsp Oil
2-3 Green Chillies, chopped
10 Colocasia Leaves, chopped
1 Cup Arbi, chopped
1 Cup Sweet Potato, chopped
5-6 Lady Fingers, chopped
1 Cup Raw Banana, chopped
1 Cup Colocasia Roots, chopped
1 Cup Yam, chopped
1 Cup Pumpkin, chopped
1 Cup Ridge Gourd, chopped
1 Cup Red Leafy Vegetable, chopped
1 Corn
1 Cup Groundnuts
1 Cup Grated Coconut
Salt to taste

साहित्य:

२-३ तेल
२-३ हिरव्या मिरच्या, तुकडे करून
१० अळूची पाने, तुकडे करून
१ कप अरबी, तुकडे करून
१ कप रताळ, तुकडे करून
५-६ भेंडी, तुकडे करून
१ कप कच्चं केळं, तुकडे करून
१ कप अळूचे देठ, तुकडे करून
१ कप सुरण, तुकडे करून
१ कप भोपळा, तुकडे करून
१ कप शिराळी, तुकडे करून
१ कप लाल माठ, तुकडे करून
१ कणीस
१ कप भिजवलेले शेंगदाणे
१ कप ओलं खोबरं
मीठ

Method:

- In a large pan, heat some oil. Once the oil is hot add green chillies.
- Then add all the vegetables one after the other.
- Add salt and grated coconut. Give it a good stir.
- Add some water and cover it with a lid for 10 minutes.
- Remove the lid after 10 minutes and mix well.
- Again cover it for 5 minutes and let the vegetables cook.
- Rushichi Bhaji is ready. This bhaji tastes best with plain rice or roti.
