Saimese Mixed Meat Salad with Rose Petals | Sanjeev Kapoor Khazana

Wholesome salad with bits of mixed meat.

SAIMESE MIXED MEAT SALAD WITH ROSE PETALS

Ingredients

5-6 chicken sausages, cut into chunks
1 cup boiled and cubed chicken
½ cup shrimps, boiled
7 – 8 fresh rose petals
4 tablespoons olive oil
1 tablespoon minced garlic
1 medium onion, finely chopped
1 teaspoon sugar
2 bird eye red chillies, finely chopped
1 tablespoon lemon juice
1 tablespoon fish sauce
4 tablespoons roasted and crushed peanuts
1 tablespoon chopped fresh coriander

Method

1. Heat one tablespoon olive oil in a nonstick pan. Add sausages and stir fry for one minute. Transfer into a bowl and keep aside.
2. Heat one tablespoon oil in the same nonstick pan. Add garlic and onion and stir fry till they turn golden brown in colour.
3. Take remaining olive oil, sugar, red chillies, lemon juice and fish sauce in a bowl and mix well.
4. In another large bowl combine fried sausages, shrimp and boiled chicken along with the dressing and mix well.
5. Add half the rose petals, peanuts, fried onion and garlic reserving some for garnish and mix well.
6. Transfer into a serving plate. Garnish with remaining rose petals, fried onion and garlic and peanuts and serve immediately.
