Salmon and cucumber on toast is no new combination but it works unarguably well. We chose to use the cucumber bloom here for the same reason. Not every bite is the same. We often look for ways to find new flavors and textures throughout a single dish. This dish is great for plated banquets because the steps are limited and they can be done in advance and served chilled.
