SALSA CHICKEN CASSEROLEIngredientsGrated mozzarella cheese for sprinkling Salsa chicken 2-3 medium tomatoes, chopped 250 grams boneless chicken, cut into 1 inch pieces ½ tablespoon oil 1-2 green chillies, finely chopped1 medium onion, chopped1 tablespoon chopped fresh coriander leavesSalt to taste Juice of ½ lemonHerbed rice1 tablespoon chopped fresh coriander leaves 1½ cups cooked rice1 tablespoon butter1 tablespoon chopped garlic½ teaspoon red chilli flakesSalt to taste Method1. To make herbed rice, heat butter in a non-stick pan. Add garlic and sauté for 30 seconds.2. Add chilli flakes and coriander leaves, mix well and sauté for a minute.3. Add rice and mix well. Add salt and mix well. Remove from heat and set aside.4. Preheat oven at 180ºC.5. To make salsa chicken, heat oil in another non-stick pan. Add green chillies and sauté for 5 seconds. Add onion, mix and sauté for 30 seconds. 6. Add tomatoes, coriander leaves and salt, mix well and cook for a minute.7. Add chicken, mix and cook till it is fully done. Add lemon juice and mix. Remove from heat and set aside.8. Spread herbed rice in an oval glass baking dish and top with the salsa chicken. Sprinkle cheese on top, put the dish in the preheated oven and bake till the cheese melts. 9. Serve hot.
