Ever imagined having millet in a Seekh Kebab? We did! Unbelievably amazing recipe ko try karna na bhule.

SAMO SEEKH KEBAB

Ingredients

1 cup barnyard millet (samo)
2-3 tbsps boiled green peas
2 tbsps finely chopped French beans
2-3 tbsps finely chopped cabbage
2-3 tbsps finely chopped carrot
2-3 tbsps finely chopped cauliflower
2 tsps ginger-green chilli paste
tsp garam masala powder
tsp red chilli powder
Salt to taste
tsp chaat masala
2 tbsps roasted gram flour
2 tbsps chopped fresh coriander leaves
Oil for shallow frying
Green chutney to serve
Onion rings to serve
Lemon wedges to serve
Fresh mint leaves to serve

Method

1. Heat 1 cups water in a deep pan. Add the barnyard millet and mix well. Cover and cook for 6-8 minutes. Switch the heat off and allow to cool completely.
2. Transfer 1 cup of the cooked barnyard millet in large bowl, add green peas, French beans, cabbage, carrot, cauliflower, ginger-green chilli paste, garam masala powder, red chilli powder, salt, chaat masala, roasted gram flour, and coriander leaves and mix till well combined.
3. Dip your fingers in some water and take a portion of the mixture. Apply it onto individual satay sticks and shape it into a seekh kebab.
4. Heat sufficient oil in a non-stick tawa, place the kebabs on it and cook on all sides till golden brown.
5. Arrange on a serving plate and serve hot with green chutney, onion rings, lemon wedges, and mint leaves.
