Sandwich Dhokla | Sanjeev Kapoor Khazana

Freshly steamed white dhokla with green chutney sandwich between.

SANDWICH DHOKLA



Ingredients

3 cups idli batter
1 tablespoon oil + for greasing
1 teaspoon mustard seeds
5-6 curry leaves
2 dried red chillies
Green chutney
¼ medium bunch fresh mint leaves
¼ medium bunch fresh coriander leaves + for garnishing
1 inch ginger, roughly chopped
2-3 green chillies
1 tablespoon lemon juice
Salt to taste
½ teaspoon chaat masala

Method

1. To prepare green chutney, grind together broken green chillies, ginger, mint leaves, ¼ medium bunch fresh coriander leaves, lemon juice, salt and chaat masala alongwith 1-2 tablespoons water into a smooth paste.
2. Heat sufficient water in a deep non-stick pan. Place a steamer, cover and let the water boil.
3. Put idli batter in a bowl. Add salt and mix well.
4. Grease a plate with some oil, pour some batter and spread. Place the plate in the hot steamer, cover and steam for 5 minutes.
5. Spread half of green chutney on the steamed batter, pour some more batter and spread lightly. Cover and again steam for 8-10 minutes. Remove from steamer and slightly cool.
6. To prepare tempering, heat 1 tablespoon oil in a non-stick pan. Add mustard seeds and let it splutter.
7. Add chopped curry leaves and let it crackle. Add chopped dried red chillies and sauté for 30 seconds. Transfer in another bowl.
8. Cut the dhokla sandwich into 1 inch pieces, place on a serving platter and pour the tempering on top.
9. Serve garnished with coriander leaves.
