saoji curry is a maharastrian style of cooking .There are several different styles for making Egg Curry and this recipe is nagpur in origin. Serve Egg Curry with a vegetable side dish and rice. http://www.vahrehvah.com/saoji-maharashtrian-egg-curryIngredients: Cloves 3 nCardamom 3 nCinnamon sticks 2 nMarathi mugah (kapokh) 1 nShahi jeera ¼ tsFennel seeds ¼ tsPoppy seeds ½ tsCoriander seeds ½ tsMace 1 nKashmiri Red chilly 5 nCoconut powder 1 tbOnion chopped (medium size) 1 nSaltGinger garlic paste 1 tsTomatoes 3 nSpinach ¼ cupBoiled eggs 4 nOil 1 tb Directions:Heat a pan add whole garam masala, fennel seeds, poppy seeds, coriander seeds, mace, kashmiri red chilly, dry roast all the ingredients, coconut powder, sauté it in a slow flame and let it cool down put this in a blender make a powder.
