~Sattu Paratha Aloo Baingan Chokha~
Prep time - 30mins
Cooking time - 40mins
Serves - 2

Ingredients:
*FOR CHOKHA*
Baingan (large, round) - 1no
Garlic cloves - 6nos
Oil - a dash
Tomatoes (large) - 3-4nos
Potato (small, boiled & peeled) - 2nos
Ginger chopped - 2tsp
Green chilli chopped - 2tsp
Onion chopped - ¼ cup
Coriander chopped - a handful
Salt - to taste
Black salt - a generous pinch
Lemon juice - 5tbsp
Mustard oil - 2tbsp

*FOR SATTU STUFFING*
Chana Sattu (roasted whole gram flour) - 1½ cups
Salt - to taste
Kalonji (nigella seeds) - 2tsp
Ajwain (carom seeds) - 1tsp
Green chilli chopped - 2nos
Ginger chopped - 2tsp
Onion chopped - ¼ cup
Coriander chopped - a handful
Lemon juice - 3tbsp
Mango pickle chopped - 4tbsp
Mustard oil - 1tbsp
Water - a dash

*FOR THE DOUGH*
Atta (whole wheat flour) - 3cups
Oil - a dash
Salt - a generous pinch
Water - as required
Ghee/oil - for frying
Atta (whole wheat flour) - for dusting
