Pair it with phulkas or paranthas and enjoy a hearty meal!SATTU TAMATAR KI SABZIIngredients1 cup sattu6 medium tomatoes2 tbsps mustard oil1½ tsps panch phoran1 tbsp chopped garlic1 inch ginger, finely chopped2-3 green chillies, chopped2 spring onions bulbs, chopped with the greensSalt to taste½ tsp turmeric powder½ tsp red chilli powder1 tsp cumin powder1 tsp coriander powder1 tsp sugar2 tbsps fresh coriander leavesRoti to serveLemon wedge for garnishCoriander sprig for garnishMethod1. Discard the eye and cut the tomatoes into ½ inch pieces. 2. Heat mustard oil in a non-stick pan. Add panch phoran and sauté till fragrant. 3. Add garlic and sauté till golden brown. Add ginger, green chillies and spring onion bulbs and sauté for 1-2 minutes. 4. Add tomatoes and salt and mix well. Cook for 1-2 minutes.5. Add turmeric powder, red chilli powder, cumin powder, coriander powder and sugar and mix well. Continue to cook for 1-2 minutes.6. Sprinkle sattu and mix. Sprinkle ¼ cup water, cover and cook for 2-3 minutes. Add coriander leaves and spring onion greens and mix well.7.
