INGREDIENTS
1 cup walnuts
1/2 cup bread crumbs
1/3 cup olive oil
2-3 garlic cloves
1 cup hot water
1 real tablespoonful tomato and/or red pepper paste
Dried mint flakes, dried thyme, ground cumin
Salt & pepper

DIRECTONS
Transfer walnuts to a large pan.
Toast for 3-4 minutes, over medium low heat, stirring occasionally.
Turn off the heat, transfer walnuts to the bowl of a blender.
Let the pan cool.
Pulse the blender a few times, until walnuts are coarsely chopped, set aside.
When the pan has cooled, pour olive oil into it.
Slice garlic cloves, add on top.
Heat until sizzled, over medium low heat.
Making sure to mix occasionally.
I usually remove and discard garlic slices, you can keep and use them, if desired.
Add tomato paste.
Gradually add 1 cup hot water, stirring constantly.
Keep mixing gently, until smooth.
Bring to a boil, then cook for 1-2 minutes, stirring constantly.
Turn off the heat.
Sprinkle any desired spices, I add 1 tsp dried mint flakes, 1 tsp thyme, a good pinch of cumin and black pepper.
Add 1/2 tsp or to taste salt, mix.
Let cool for about 5 minutes.
Then add the bread crumbs and walnuts, mix well.
Check for seasoning.
That's it, amazingly delicious cevizli tarator is done!
Let it cool, transfer to a container, cover and refrigerate.
To be honest, I have no idea how long you can store it.
We usually eat it all, mostly in 2-3 days.
